If you’re looking to change up your after-school snack options with some fall flavors, here’s a recipe for the kids can help with. Apple, cinnamon, nutmeg, yum!
Ingredients
- 2 medium-sized apples, peeled, cored and cut crosswise into rings (about 1/4-inch thick)
- 1/2 cup all-purpose or whole wheat flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon nutmeg
- 1/2 teaspoon vanilla extract
- 1 large egg
- 6 tablespoons apple cider
- 2 tablespoons unsalted butter
- Topping:
- 1/2 cup granulated sugar
- 1 teaspoon cinnamon
Directions
- In a medium bowl, whisk together the flour, baking powder, baking soda and nutmeg.
- Add the egg and vanilla and mix.
- Add the apple cider and whisk slowly until a smooth batter forms.
- Melt the butter in a skillet over medium-high heat.
- Dip the apple slices into the batter to coat them. Let excess batter drip off.
- When the butter in the skillet starts to bubble, add the apple slices in a single layer. You may have to work in batches.
- Let the apple slices cook for about 2 minutes on the first side, just until golden brown and set. Flip and cook for another 1 to 2 minutes on the second side, until golden brown.
- Remove the apple “doughnuts” from the pan and set on paper towels.
- In a shallow dish, mix together the cinnamon and granulated sugar. Toss the apple “doughnuts” in the cinnamon sugar, sprinkle with powdered sugar and serve.
